    Ingredients

    • 100 grams (3 1/2 ounces) vermicelli
    • 2 tablespoons butter
    • 500 ml (about 2 cups) milk
    • 150 grams (2/3 cup) granulated sugar
    • Lemon peel
    • 3 egg yolks
    • 1 cinnamon stick
    • Cinnamon powder for garnish

    Directions

    1. In a saucepan, pour the milk, sugar, lemon peel, butter and the cinnamon stick. Stir, place the pan on the stove over medium-high heat and bring to a boil. When starts boiling, add the vermicelli, stir and cook for 7 to 8 minutes (stir occasionally so the vermicelli doesn’t stick to the pan).
    2. When the vermicelli is cooked and the milk is slightly creamy, turn off the heat. Remove the lemon peel and the cinnamon stick and let cool for about 10 minutes.
    3. Whisk the egg yolks and mix together immediately in the vermicelli (mix together immediately to prevent the egg yolks from cooking). Add the vermicelli on a plate or in individual bowls and garnish with cinnamon powder.
    4. Let cool and serve.
    5. Note: We prefer to use just 3 egg yolks but you can add one or two more egg yolks.
