- 5 eggs
- 125 grams / (4 1/2 ounces) sugar
- 1 red apple
- Zest of one lemon
- 100 grams / (3 1/2 ounces) all-purpose flour
- 2 pineapple slices
- 1 tablespoon cinnamon
- 1 tablespoon sugar
- Preheat the oven to 180ºC / (350ºF). Grease a round cake pan (25 x 6 centimeters / (9 3/4 x 2 1/3 inches)) with margarine and dust with flour.
- In an electric mixer, beat on medium speed the eggs, sugar and the lemon zest until obtain a homogeneous mixture. Reduce the mixer speed to low, add the flour and beat until a creamy mixture. Finally, fold with a spatula the pineapple cut into pieces and the peeled apple cut into small cubes.
- Mix the cinnamon and the sugar in a bowl. Pour the dough into the prepared pan and sprinkle with the cinnamon and sugar mixture. Bake until a toothpick inserted in the center comes out clean, about 30 minutes (the time depends on the oven).
- Remove the cake from the oven and unmold onto a plate. Let cool completely and serve.
