Have a very important birthday party and want to surprise? We have the perfect cake for you! Our cake filled with cream and strawberries has a great flavor and a delicious presentation!

Ingredients

  • For the cake:
  • 10 eggs
  • Zest of two lemons
  • 300 grams / (10 1/2 ounces) dark brown sugar
  • 2 tablespoons honey
  • 2 teaspoons baking powder
  • 300 grams / (10 1/2 ounces) all-purpose flour
  • For the filling:
  • 400 grams / (14 ounces) strawberries
  • 100 grams / 3 1/2 ounces) soft fruit
  • 2 tablespoons milk
  • 175 grams / (6 1/4 ounces) softened butter
  • 400 grams / (14 ounces) powdered sugar
  • 1 teaspoon vanilla extract

    Directions

    Step 1


    1. For the cake:
    2. Preheat the oven to 180ºC / (350ºF). Grease two round cake pans (approximately 23 x 7 centimeters / (9 x 2 3/4 inches)) with margarine and dust with flour.

    1. Separate the yolks from the whites. Beat the egg whites until stiff peaks form and reserve in the fridge.

    Step 3


    1. In an electric mixer, beat on medium speed the egg yolks, brown sugar and the lemon zest until a creamy mixture. Add the honey and mix for 2 to 3 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour mixed with the baking powder and beat until obtain a homogeneous and creamy mixture. Finally, fold gently with a spatula the whipped egg whites.

    Step 4


    1. Divide the mixture, pour into the prepared pans and bake until a toothpick inserted in the center comes out clean, about 45 minutes (the time depends on the oven).

    1. Remove the cakes from oven and let cool a little.

    1. For the filling:
    2. In an electric mixer, beat on medium speed the butter, milk and the vanilla extract until a very creamy mixture. Reduce the mixer speed to low, add the powdered sugar and beat until obtain a consistent cream.

    Step 7


    1. Slice both cakes in half with a long knife.

    Step 8


    1. Wash, remove the stem from the strawberries and cut them into pieces. Put the cream in a pastry bag.

    Step 9


    1. Place the bottom slice of on of the cakes on a platter and fill the middle with the strawberries and the cream (as in the photo).Cake filled with cream and strawberries | Food From Portugal Cover with the top slice of the cake and repeat this procedure two more times.

    Step 10


    1. Serve the cake garnished with soft fruit, strawberries and powdered sugar. Store the cake in fridge.
    2. Tip: For garnish, stick the red fruits and the strawberries with toothpicks.
