Easy and simple to prepare this chicken in the oven with rice is ideal for a dinner with family or friends !! Don’t waste time, bon appetit!!

Ingredients

  • 1.5 kg / (3 1/3 pounds) chicken cut into pieces
  • 2 tablespoons margarine
  • Thyme (to taste)
  • Pepper (to taste)
  • Juice of one lemon
  • Nutmeg (to taste)
  • 4 cloves of garlic
  • 1/2 teaspoon paprika
  • 100 ml / (6 3/4 tablespoons) olive oil
  • 100 ml / (6 3/4 tablespoons) white wine
  • Salt (to taste)
  • For the rice:
  • 250 grams / (8 3/4 ounces) rice
  • 50 ml / (3 1/3 tablespoons) olive oil
  • 1 bay leaf
  • 1 medium onion
  • 1/2 green pepper
  • 1/2 red pepper
  • Salt (to taste)

    Directions

    Step 1


    1. Rub the chicken pieces with margarine and place on a baking pan. Season with a little salt, lemon juice, pepper, nutmeg, chopped garlics, paprika and thyme. Drizzle with olive oil and white wine and marinate for 1 hour.Chicken in the oven with rice | Food From Portugal

    1. Preheat the oven to 180ºC / (350ºF).

    Step 3


    1. Bake the chicken until start to turn golden, about 45 to 50 minutes. Occasionally drizzle the chicken with the sauce.

    1. For the rice:
    2. Meanwhile, place the olive oil, chopped onion, the peppers cut into strips and the bay leaf in a saucepan and saute over low heat until the onion start to turn slightly golden. Add the rice and season with some salt. Stir and fry the rice for 1 minute. Pour the water (twice the rice volume), stir and boil over medium-high heat.     1. Turn off the oven and serve the chicken with the rice. Bon appetit!!!
