HOW TO MAKE EGGS BENEDICT

Step 1: In a saucepan, pour enough water to poach the eggs, two teaspoons vinegar and a sprig of coriander. Bring to a boil over medium-high heat. When you start to see small air bubbles coming up from the bottom of the pan, add the eggs and poach them on medium heat about 3 to 4 minutes.

Step 2: Meanwhile, melt the margarine in a skillet or in the microwave. In a blender, add two egg yolks and the lemon juice. Mix for about 15 seconds, reduce the speed and add the melted margarine, salt and pepper. Mix more about 10 seconds and set aside.

Step 3: Cut the bread in two slices and toast slightly in the toaster. Rub a peeled garlic in the two bread slices and seasson with pepper. Drizzle the bread with olive oil and, on top of each bread, place two ham slices and the poached eggs. Drizzle with the sauce, season with a little more pepper and serve immediately.
