If you don’t have much time and want to prepare a quick dinner but nutritious, this recipe of eggs on tomato sauce is the ideal one, it’s very tasty and easy to prepare! Serve with fries, it’s a perfect match!

Ingredients

  • 3 medium ripe tomatoes
  • 1 medium onion
  • 2 cloves of garlic
  • 4 eggs
  • 1 bay leaf
  • 50 ml / (3 1/3 tablespoons) olive oil
  • Salt (to taste)

Directions

    Step 1


    Place the olive oil, chopped onion, bay leaf, chopped garlics, the peeled tomatoes cut into small pieces in a saucepan and cook over low heat until the tomato start to break down.

    Step 2


    Then, add the eggs, season with some salt and let them cook over low heat, about 7 to 8 minutes. When the eggs are poached, turn off the heat and serve with fries cut into round slices.
