Fish loins with puree in the oven

Fish cooked in milk, seasoned with lemon juice, pepper and salt, mix in a sauté of olive oil, garlics, onion and leek, sprinkled with chopped coriander, which goes in the oven with mashed potato.

Ingredients

  • For the fish:
  • 400 grams / (14 ounces) hake loins
  • 1 medium onion
  • 50 ml / (3 1/3 tablespoons) olive oil
  • 1/2 french garlic
  • Coriander (to taste)
  • 1 egg yolk
  • 250 ml / (1 cup and 1 tablespoon) milk
  • Juice of half a lemon
  • Pepper (to taste)
  • Zest of a lemon
  • 3 cloves of garlic
  • Grated cheese (to taste)
  • Salt (to taste)
  • For the puree:
  • 1 kg / (2 1/4 pounds) potatoes
  • 10 grams / (1/3 ounce) margarine
  • Juice of one lemon
  • Nutmeg (to taste)
  • Pepper (to taste)
  • 400 ml / (1 2/3 cups) milk
  • Salt (to taste)

    Directions

    Step 1


    1. For the puree:
    2. Peel and wash the potatoes. Cook them in a pan with water seasoned with salt. When they are cooked pass them through a food mill.

    Step 2


    1. In a pan, place the potato along with the milk, margarine, nutmeg, pepper and lemon juice. Bring the pan over medium-high heat, stirring with a wooden spoon until starts boiling. When starts boiling turn off the heat and set aside.

    Step 3


    1. For the fish:
    2. Place the fish in a pan together with the milk, the lemon zest, the lemon juice, pepper and salt. Cover the pan and bring to low heat about 20 minutes. Stir once in a while with a spoon.

    Step 4


    1. When the fish is cooked, drain it, place on a plate and flake it with a fork.

    Step 5


    1. In a frying pan, place the olive oil, the french garlic cut into thin slices, the chopped onion and the chopped garlics. Bring to low heat until the onion starts to turn slightly golden. Then, add the fish, mix in the mixture and cook about five minutes. Stir once in a while. Turn off the heat and sprinkle with chopped coriander.

    Step 6


    1. In a glass baking pan place a layer of puree, in the middle, a layer of fish and, finally, another layer of puree. Brush with beaten egg yolk, sprinkle with grated cheese and bring to preheated oven at 180°C / (350ºF) about 25 minutes until golden on top.

    Step 7


    1. Turn off the oven and serve with lettuce salad.
