HOW TO MAKE ONION SOUP

Step 1: Peel and wash the onions, potatoes and the zucchini.

Step 2: In a pot with 1.5 liter (about 6 cups) water add the onions, potatoes and the zucchini, everything cut into pieces. Bring to a boil over high heat.

Step 3: When starts boiling, reduce to medium-low heat and cook about 25 minutes.

Step 4: Remove briefly the pot from heat and use a hand blender to blend the soup.

Step 5: Season with olive oil and salt, stir with a wooden spoon and place the pot back on the stove over high heat.

Step 6: When starts boiling, turn off the heat and serve the soup with bread slices.
