Ingredients

  • For the bread:
  • 300 grams / (10 1/2 ounces) white flour
  • 50 ml / (3 1/3 tablespoons) olive oil
  • 1 tablespoon dry baker’s yeast
  • 150 ml / (1/2 cup and 2 tablespoons) water
  • 1 teaspoon salt
  • For the filling:
  • 150 grams / (5 1/3 ounces) canned tuna
  • 1 medium ripe tomato
  • 50 ml / (3 1/3 tablespoons) olive oil
  • 1 small onion
  • Pepper (to taste)
  • 1 clove of garlic
  • Parsley (to taste)

Directions

    Step 1


    For the bread:

    In a large bowl, stir the flour and the salt with a spoon. Add the baker’s yeast and mix well. Pour the olive oil and some of the water. Knead everything with your hands and go slowly pouring the remaining water.

    Step 2


    Place the dough over a table sprinkled with flour and knead it well until it is fully involved and soft. When this process is completed, let the dough rise in a bowl covered with cling filmStuffed bread with tuna | Food From Portugal about 45 to 1 hour until the dough double in size.

    For the filling:

    Place the olive oil, chopped onion, the peeled tomato cut into small pieces and the chopped garlic in a saucepan and simmer over low heat until the tomato start to break down. Then, add the tuna, season with pepper, stir and cook about 4 to 5 minutes, stirring occasionally. Turn off the heat and sprinkle with chopped parsley. Allow to cool to room temperature.

    Remove the dough from the bowl and knead it a little more. Place it in a baking tray lined with tracing paper.     Step 5


    Meanwhile, preheat the oven to 200ºC / (400ºF).

    Step 6


    Bake the bread about 30 to 35 minutes until start to browned. Remove the bread from oven and serve.
