Ingredients

  • 75 grams / (2 2/3 ounces) walnut kernels
  • 2 eggs
  • 100 ml / (6 3/4 tablespoons) whipping cream
  • 125 grams / (4 1/2 ounces) sugar
  • 125 grams / (4 1/2 ounces) all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Walnut kernels for garnish

    Directions

    Step 1


    1. Preheat the oven to 180ºC / (350ºF). Line muffin tins with paper liners.Walnut muffins | Food From Portugal

    1. In an electric mixer, beat on medium speed the eggs and the sugar until obtain a quite creamy mixture. Add the grinded walnut kernels, the vanilla extract, the cream and mix for 2 to 3 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour mixed with the baking powder and beat until a homogeneous mixture.

    1. Pour small portions of the cream into the paper liners, garnish with walnut kernelsWalnut muffins | Food From Portugal and bake until a toothpick inserted in the center of a muffin comes out clean, about 15 to 20 minutes (the time depends on the oven).
