  • 4 pork chops (about 500 grams (17 1/2 ounces))
  • Rosemary (to taste)
  • 4 cloves of garlic
  • 100 ml (1/2 cup) olive oil
  • 100 ml (1/2 cup) white wine
  • 1 bay leaf
  • 2 medium onions
  • Pepper (to taste)
  • 4 pineapple slices
  • Salt (to taste)
  • For the rice:
  • 250 grams (1 1/4 cups) rice
  • 50 ml (1/4 cup) olive oil
  • 400 ml (1 3/4 cups) water
  • 1 medium onion
  • 150 grams (1 cup) peas
  • Salt (to taste)


    Step 1

    1. Preheat the oven to 180ºC (350ºF).

    Step 2

    1. Season the chops with salt, chopped garlic, rosemary, bay leaf, pepper and white wine. Let marinate about an hour.

    Step 3

    1. In a baking pan, place the onions cut into round slices together with the chops and the marinade. Drizzle with olive oil and bake about 25 minutes.

    Step 4

    1. Meanwhile, cut the pineapple slices into pieces and set aside. Remove the baking pan briefly from the oven and add the pineapple pieces. Place back in the oven more 5 minutes until the chops start to turn slightly golden brown.

    Step 5

    1. Remove the baking pan from the oven and serve the chops with rice with peas.

    2. Place the olive oil, the chopped onion and peas in a saucepan and saute over low heat until onion start to turn slightly browned. Pour the water and boil over high heat. When starts boiling, reduce to medium heat and cook about 15 minutes. Then, add the rice, stir, season with salt and simmer about 10 minutes.
