HOW TO MAKE COD DELIGHT

For the puree: Peel and wash the potatoes. Cook them in a saucepan with water seasoned with salt. When the potatoes are cooked, drain them and mash the potatoes with a potato masher or with a fork. Season with lemon juice, pepper, nutmeg, margarine and milk. Stir with a wooden spoon and place back on the stove over low heat. When starts bubbling, turn off the heat and set aside.
Cook the cod steaks in a saucepan with water. When the cod is cooked, drain it with a skimmer. Remove the skin and bones and flake it with a fork; set aside.
Place the olive oil, the onion finely sliced into round slices and the chopped garlic in a saucepan and saute over low heat until the onion start to turn golden brown. Add the flaked cod, season with a little pepper, stir and cook for about 4 to 5 minutes.
In a baking dish, place a layer of puree, on top, a layer of cod and finally, another layer of puree. Brush with beaten egg yolk and bake until golden brown, about 40 minutes. Cod delight steps Turn off the oven and serve.

    Ingredients

    • 3 desalted cod steaks (about 800 grams (1 3/4 pounds))
    • 2 medium onions
    • 2 cloves of garlic
    • 50 ml (1/4 cup) olive oil
    • For the puree:

    • 1.2 kg (2 2/3 pounds) potatoes
    • 1 tablespoon margarine
    • Pepper (to taste)
    • 400 ml (1 3/4 cups) milk
    • Juice of half a lemon
    • Nutmeg (to taste)
    • Salt (to taste)

    Directions

    1. For the puree:
      Peel and wash the potatoes. Place them in a saucepan with water seasoned with salt and boil over high heat. When starts boiling, reduce to medium heat and cook the potatoes for 25 to 30 minutes.
    2. When the potatoes are cooked, drain them and mash the potatoes with a potato masher or with a fork. Season with lemon juice, pepper, nutmeg, margarine and milk. Stir with a wooden spoon and place back on the stove over low heat. When starts bubbling, turn off the heat and set aside.
    3. Place the cod steaks in a saucepan with water and boil over high heat. When starts boiling, reduce to medium heat and cook the cod about 5 minutes. When the cod is cooked, drain it with a skimmer. Remove the skin and bones and flake it with a fork; set aside.

Add the flaked cod, season with a little pepper, stir and cook for about 4 to 5 minutes, stirring occasionally.
    5. Preheat the oven to 180ºC (350ºF).
    6. In a baking dish, place a layer of puree, on top, a layer of cod and finally, another layer of puree. Brush with beaten egg yolk and bake until golden brown, about 40 minutes.
    7. Turn off the oven and serve.
