Cod in the oven with shrimp and béchamel sauce

A delicious recipe of cod cooked in olive oil, onion and garlic, seasoned with pepper, that goes in the oven mixed in fried potatoes and shrimps, drizzled with béchamel sauce.

Ingredients

  • 3 desalted cod steaks (about 800 grams (1 3/4 pounds))
  • 2 medium onions
  • 7 cloves of garlic
  • 150 ml (2/3 cup) olive oil
  • Olive oil for frying the potatoes
  • Pepper (to taste)
  • 350 grams (12 1/3 ounces) peeled shrimp
  • 1 kg (2 1/4 pounds) potatoes
  • Salt (to taste)
  • For the béchamel sauce:
  • 200 ml (about 1 cup) milk
  • 2 tablespoons corn starch flour
  • 1/2 tablespoon butter
  • Pepper (to taste)
  • Nutmeg (to taste)
  • Salt (to taste)

    Directions

    Step 1


    1. For the béchamel sauce:
    2. Place the butter in a saucepan and heat over low heat. When the butter start to melt, add the flour with a little milk and whisk until the flour is dissolved. Gradually add the rest of the milk, increase to medium heat and stir until a homogeneous and creamy mixture, about 10 minutes.

    1. Turn off the heat and season with a little salt, pepper and nutmeg. Mix the seasonings in the sauce and let cool. Béchamel sauce recipe.

    Step 3


    1. Cook the cod in a pan with water about five minutes. Turn off the heat, drain the cod steaks and place them on a plate. Remove the skins and the spines and shred into slivers. Set aside.

    Step 4


    1. In a frying pan, place the olive oil, the onions cut into round slices and the chopped garlic. Leave to sauté over low heat until the onion starts to turn golden brown. Add the cod slivers along with the shrimp and season with a little pepper. Mix in the sautéed with a wooden spoon and cook about five minutes. Stir once in a while.

    Step 5


    1. Wash, peel the potatoes and cut them into round slices. Season with salt and fry in olive oil. When they are fried place them on a platter over absorbent paper.

    1. In a rectangular baking dish place a layer of the cod mixture, on top, the potatoes and, finally the remaining cod mixture. Drizzle everything with the béchamel sauce and bring to preheated oven at 180°C (350ºF) about 20 minutes until gratin.

    1. Turn off the oven and serve.
