Peas with carrot, courgette and poached eggs | Food From Portugal

Ingredients

  • 300 grams (2 cups) peas
  • 2 medium carrots
  • 1 small courgette
  • Pepper (to taste)
  • 50 ml (1/4 cup) olive oil
  • 1 medium onion
  • 3 cloves of garlic
  • Coriander (to taste)
  • 2 eggs
  • Salt (to taste)

    Directions

    Step 1


    1. Put the olive oil, chopped onion, the carrots cut into pieces and the chopped garlic in a saucepan and saute over low heat until the onion start to turn slightly golden. Add the peas and the sliced courgette and season with a little salt and pepper. Stir and cook for about 2 minutes. Pour the water (enough water to completely cover the peas) and boil over medium-high heat. When starts boiling, reduce to medium-low heat and cook about 20 minutes, stirring occasionally.

    Step 2


    1. When the peas are almost cooked, add the eggs and let them poach. Turn off the heat, sprinkle with chopped coriander and serve.
