  • Olive oil - Adds flavor to the recipe.

HOW TO MAKE PORTUGUESE BREAD SOUP

Step 1: In a bowl, mix with a fork the chopped coriander, grated garlic, olive oil, salt and pepper; set aside. Olive oil and coriander mixture on a dish bowl

    • 8 cloves of garlic
    • Coriander (to taste)
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 450 grams (1 pound) stale bread
    • 1.5 liters (about 6 cups) water
    • 4 eggs
    • 150 ml (2/3 cup) olive oil
    • A few drops of vinegar

    Directions

    Thank you. This is the real soup that I had on my first visit to Portugal. The other recipes I’ve seen on the Internet are too fussy, too inauthentic. There’s no chicken stock, no cooked garlic. Just simple, excellent, heart-warming soup, as presented here.
