STEP 1 Beat the sugar and the melted butter. Pour the lemon juice, lemon zest and beat for 1 to 2 minutes. Beat the egg and the vanilla extract. Add the flour and fold with a spatula.

STEP 2 Cover the bowl with cling film and refrigerate for about 1 hour.

STEP 3 Remove the bowl from the fridge and shape with your hands 20 to 22 balls.

STEP 4 Sprinkle a plate with cinnamon powder. Roll each ball in cinnamon powder until evenly coated and place in a baking tray.

STEP 5 Bake for 10 to 12 minutes.
