    Ingredients

    • 4 ling fish steaks (about 900 grams (2 pounds))
    • 2 medium onions
    • 3 cloves of garlic
    • 50 ml (1/4 cup) olive oil
    • 150 ml (2/3 cup) mayonnaise
    • Pepper (to taste)
    • 1 egg yolk
    • Salt (to taste)
    • For the puree:
    • 1.2 kg (2 3/4 pounds) potatoes
    • Juice of one lemon
    • 1 tablespoon margarine
    • Pepper (to taste)
    • 300 ml (1 1/3 cups) milk
    • Salt (to taste)

    Directions

    1. Season the ling fish with a little salt and pepper and cook it in a pan with water. When the steaks are cooked, place them on a plate, remove the skins and the spines and cut them in loins.
    2. In a frying pan place the olive oil, the onions cut into round slices and the chopped garlic. Leave to sauté over low heat until the onion start to turn golden. Add the loins fish, stir and cook about three minutes. Stir once in a while.
    3. Remove the fish to a plate, pour the mayonnaise inside the frying pan, wrap in the mixture and turn off the heat.
    4. For the puree:
      Peel, wash the potatoes and cook them in a pan with water seasoned with salt. When they are cooked pass them through a food mill.
    5. In a pan, place the potato along with the milk, margarine, nutmeg, pepper and lemon juice. Bring the pan over medium-high heat, stirring with a wooden spoon until starts boiling. When starts boiling turn off the heat.
    6. Place the fish in the middle of a terracotta round dish and, around the fish, the puree. Cover the fish with the mayonnaise and the onion mixture. Brush the puree with the beaten egg yolk and bring to preheated oven at 180°C (350ºF) about 25 to 30 minutes.
