HOW TO MAKE EASY TUNA FRITTERS
Step 1: Drain well the tuna and set aside.
Step 2: In a large bowl, whisk the eggs and the flour until obtain a homogeneous mixture.
Add the tuna, chopped onion, chopped parsley, pepper and mix with a wooden spoon.
Step 3: Heat the oil in a large skillet. When the oil is hot, add small portions of the tuna mixture with a spoon and fry on both sides for about 6 minutes or until golden brown.
Step 4: Transfer the tuna fritters to a paper towel-lined plate to drain the excess oil.
Step 5: Serve the tuna fritters with tomato rice, green peas rice or carrot rice.

If you want to eat the fritters in another day, let them cool to room temperature and place in an airtight container or wrap in aluminum foil. Never store the fritters for more than 1 day, after a day or two the fritters begin to lose quality and develop microorganisms.
