HOW TO MAKE TOMATO RICE WITH PEPPERS:
In a saucepan, add the peeled tomato cut into chunks, chopped onion, chopped garlic, red pepper cut into strips, green pepper cut into strips and the olive oil. Stir and simmer until the tomato start to break down. Add the rice and season with salt. Stir and cook for 1 to 2 minutes. Pour the water, stir and boil on a medium-high heat. When starts boiling, reduce to a low heat and cook the rice for 10 to 12 minutes. Sprinkle with chopped coriander, turn off the heat and serve.

- 50 ml (1/4 cup) olive oil

- Coriander (to taste)
- 1 teaspoon salt
