HOW TO MAKE SIMPLE SHRIMP RICE:
Step 1: In a saucepan, add the peeled tomato cut into chunks, chopped onion, chopped garlic and the olive oil. Stir and simmer until the tomato start to break down.
Step 2: Add the shrimp, stir and cook for 3 to 4 minutes. Add the rice and season with salt and pepper. Stir, pour the seafood broth and bring to a boil over medium-high heat. When starts boiling, reduce to a low heat and cook for about 12 minutes.
Step 3: Sprinkle with chopped coriander, turn off the heat and serve.

- 350 grams (12 1/2 ounces) peeled shrimp
- 200 grams (1 cup) rice
- 600 ml (2 1/2 cups) seafood broth
- 50 ml (1/4 cup) olive oil
- 3 medium ripe tomatoes
- 1 large onion
- 3 cloves of garlic
- 1/2 teaspoon pepper
- Coriander (to taste)
- 1 teaspoon salt
