HOW TO MAKE SIMPLE SHRIMP RICE:

In a saucepan, add the peeled tomato cut into chunks, chopped onion, chopped garlic and the olive oil. Stir and simmer until the tomato start to break down. Add the shrimp, stir and cook for 3 to 4 minutes. Add the rice and season with salt and pepper. Stir, pour the seafood broth and bring to a boil over medium-high heat. When starts boiling, reduce to a low heat and cook for about 12 minutes. Sprinkle with chopped coriander, turn off the heat and serve.
