- Shrimp - Peeled shrimp.
- Rice - Long-grain rice or medium-grain rice.
- Seafood broth - To give flavor and cook the rice.
- Olive oil, chopped onion, peeled tomato cut into small chunks and chopped garlic - To give color and flavor and to cook the shrimp.
- Salt and pepper - For seasoning.
- Coriander - Chopped coriander. Gives a fresh aroma and bright taste.

HOW TO MAKE SIMPLE SHRIMP RICE
Step 1: In a saucepan, add the peeled tomato cut into chunks, chopped onion, chopped garlic and the olive oil. Stir and simmer until the tomato start to break down.
Step 2: Add the shrimp, stir and cook for 3 to 4 minutes. Add the rice and season with salt and pepper. Stir, pour the seafood broth and bring to a boil over medium-high heat. When starts boiling, reduce to a low heat and cook for about 12 minutes.
Step 3: Sprinkle with chopped coriander, turn off the heat and serve.
TIPS FOR COOKING RICE
1. We usually use long-grain rice or medium-grain rice but you can use another type of rice. Long-grain rice is looser while medium-grain rice is creamier and absorb much more the flavors.
Rice cooking time: about 10 to 12 minutes for long-grain rice and 13 to 15 minutes for medium-grain rice.
2. The amount of water for the rice depends on each person's taste. The mesure we usually use is 250 ml (about 1 cup) to 300 ml (1 1/3 cups) of water per 100 grams (1/2 cup) rice.
3. Always cook the rice with a lid and over low heat to prevent the rice from burning and sticking to the bottom of the pan.

- 350 grams (12 1/2 ounces) peeled shrimp
- 200 grams (1 cup) long-grain rice
- 600 ml (2 1/2 cups) seafood broth
- 50 ml (1/4 cup) olive oil
- 3 medium ripe tomatoes
- 1 large onion
- 3 cloves of garlic
- 1/2 teaspoon pepper
- Coriander (to taste)
- 1 teaspoon salt
