Ingredients

  • 350 grams (12 1/2 ounces) peeled shrimp
  • 200 grams (1 cup) rice
  • 600 ml (2 1/2 cups) seafood broth
  • 50 ml (1/4 cup) olive oil
  • 3 medium ripe tomatoes
  • 1 large onion
  • 3 cloves of garlic
  • 1/2 teaspoon pepper
  • Coriander (to taste)
  • 1 teaspoon salt

Directions

  1. In a saucepan, add the peeled tomato cut into chunks, chopped onion, chopped garlic and the olive oil. Stir and simmer until the tomato start to break down, stirring occasionally.
  2. Add the shrimp, stir and cook for 3 to 4 minutes, stirring occasionally. Add the rice and season with salt and pepper. Stir, pour the seafood broth and bring to a boil over medium-high heat. When starts boiling, reduce to a low heat and cook for about 12 minutes.
  3. Sprinkle with chopped coriander, turn off the heat and serve.
