  • Olive oil, margarine or butter and garlic - To sauté and flavor.
  • Lemon juice and lemon zest - Adds a very nice fresh flavor.
  • Chicken broth - For cooking and to give an extra flavor to the rice.
  • Rosemary, lemon and lemon zest - For garnish.

HOW TO MAKE EASY LEMON RICE

Step 1: In a saucepan, add the olive oil, chopped garlic and the margarine. Sauté over low heat for 1 to 2 minutes.

Step 2: Add the rice and season with salt, lemon zest and lemon juice. Stir and fry the rice for about 1 to 2 minutes.

Step 3: Pour the chicken broth and bring to a boil over medium-high heat. When starts boiling, reduce to low heat and cook the rice for about 10 to 12 minutes.

Step 4: Turn off the heat and garnish with lemon slices, lemon zest and rosemary.

TIPS FOR COOKING RICE

We usually use long-grain rice or medium-grain rice but you can use another type of rice. Long-grain rice is looser while medium-grain rice is creamier and absorb much more the flavors.

Always cook the rice with the pan covered and over low heat to prevent the rice from burning and sticking to the bottom of the pan.

Another thing we usually do is to cook the rice with chicken broth to give the rice even more flavor (if you cook the rice with chicken broth, reduce the amount of salt).

Yes, you can store in the fridge! Allow the rice to cool to room temperature and place it in an airtight container. You can store the rice in the fridge for about 2 to 3 days. Beyond this time frame, it might start losing its taste and texture.
