- Red beans, pork ribs, rice, Portuguese chouriço, olive oil

HOW TO MAKE RICE AND BEANS:

Soak the beans overnight.
Cook the beans on a pressure cooker with water for about 20 minutes. When is cooked, remove the beans with a skimmer for a plate and reserve the cooking water.
Place the olive oil, the chopped onion and the sliced chouriço in a saucepan and sauté over low heat for about 7 to 8 minutes. Add the pork ribs and season with salt, pepper and nutmeg. Stir and cook for about 10 minutes. Pour the white wine, stir, cover the pan with a lid and cook for more 25 minutes. Add the beans and the rice and season with a little more salt. Stir, pour the cooking water (enough water to completely cover the mixture) and boil over medium-high heat. When starts boiling, reduce to medium-low heat and cook for 10 to 12 minutes. Turn off the heat and serve.

Ingredients

  • 200 grams (7 ounces) red beans
  • 500 grams (17 1/2 ounces) pork ribs cut into pieces
  • 100 ml (1/2 cup) white wine
  • 200 grams (1 cup) rice
  • 50 grams (1 3/4 ounces) Portuguese chouriço
  • 1 large onion
  • 50 ml (1/4 cup) olive oil
  • Nutmeg (to taste)
  • Pepper (to taste)
  • 1.5 liters (6 cups) water
  • Salt (to taste)

  4. Add the beans and the rice and season with a little more salt. Stir, pour the cooking water (enough water to completely cover the mixture (about 900 ml (4 cups))) and boil over medium-high heat. When starts boiling, reduce to medium-low heat and cook for 10 to 12 minutes.
  5. Turn off the heat and serve.

      100 ml white wine. We forgot to add the white wine to the ingredients list. Thanks for your help!
