INGREDIENTS FOR PORTUGUESE RICE AND BEANS

- Red beans - Soak the beans overnight.
- Pork ribs - Tender pork ribs cut into pieces.
- Long-grain rice or medium-grain rice - Long-grain rice is looser while medium-grain rice is creamier and absorb much more the flavors.
- Portuguese chouriço - Sliced Portuguese chouriço. Adds an extra flavor to the sauté.
- Chopped onion and olive oil - To sauté and flavor.
- Nutmeg, pepper, white wine and salt - To season.
- Water - To cook the beans.

HOW TO MAKE PORTUGUESE RICE AND BEANS
Step 1: Soak the beans overnight.
Step 2: Cook the beans on a pressure cooker with water for about 20 minutes. Remove the beans with a skimmer to a plate and reserve the cooking water.
Step 3: In a large saucepan, add the olive oil, chopped onion and the sliced chouriço. Stir with a wooden spoon and sauté over low heat for about 7 to 8 minutes, stirring occasionally.
Step 4: Add the pork ribs and season with salt, pepper and nutmeg. Stir and cook for about 10 minutes, stirring occasionally. Pour the white wine, stir, cover the pan with a lid and cook for more 25 minutes, stirring occasionally.
Step 5: Add the beans and the rice and season with a little more salt. Stir, pour the beans cooking water (enough water to completely cover the mixture) and boil over medium-high heat. Once it starts boiling, reduce to medium-low heat and cook for 10 to 12 minutes.
Step 6: Turn off the heat and serve.

- 500 grams (17 1/2 ounces) pork ribs cut into pieces
- 100 ml (1/2 cup) white wine
- 200 grams (1 cup) long-grain rice or medium-grain rice
- 50 grams (1 3/4 ounces) Portuguese chouriço
- 1 large onion
- 50 ml (1/4 cup) olive oil
- Nutmeg (to taste)
- Pepper (to taste)
- 1.5 liters (6 cups) water
- Salt (to taste)
