Ingredients: bay leaf, coriander, garlic, olive oil, potatoes, sweet red pepper paste, white wine

Ingredients

  • 800 grams (1 3/4 pounds) pork cut into cubes
  • 800 grams (1 3/4 pounds) small potatoes
  • 100 ml (1/2 cup) olive oil
  • 150 ml (2/3 cup) white wine
  • 2 bay leaves
  • 1 tablespoon sweet red pepper paste
  • 8 cloves of garlic
  • Parsley (to taste)
  • 2 teaspoons salt

Directions

  1. In a glass bowl, season the meat with 1 teaspoon salt, unpeeled crushed garlic, bay leaf, sweet red pepper paste and white wine. Mix the seasonings into the meat and let marinate for about two hours.
  2. Preheat the oven to 180ºC (350ºF).
  3. Add the peeled potatoes cut in half on a glass baking dish and season with 1 teaspoon salt.
  4. Drain the meat marinade (reserve the marinade). Add the meat to the baking dish and drizzle with the meat marinade and olive oil. Bake until the meat start to turn golden, about 1 hour and 10 minutes. Occasionally, drizzle the meat and potatoes with the sauce.
