HOW TO MAKE TENDER OVEN BAKED RIBS
Step 1: Wash the unpeeled potatoes and give a small cut across each one of them.
Step 2: Place the pork ribs and the potatoes on a baking dish and season with salt.
Step 3: In a small bowl, combine the mustard, honey, garlic powder, paprika, pepper, nutmeg, thyme and olive oil.
Drizzle the pork ribs and the potatoes with this sauce and let marinate for about 1-2 hours.
Step 4: Preheat the oven to 180ºC (350ºF).
Step 5: Bake for about 1 hour and 30 minutes or until golden brown. From time to time, baste the pork ribs and potatoes with the sauce to prevent them from drying out.
Step 6: Turn off the oven and serve.
RECIPE TIPS
1. If the pork ribs and the potatoes start to brown too much reduce the oven temperature or cover with aluminum foil.
2. If you have leftovers, store the meat in the fridge in a properly airtight container (to prevent the growth of microorganisms). To avoid drying out the meat, do not reheat the food in the oven, reheat it in the microwave.
How long should I marinate the pork ribs and the potatoes?
Our suggestion is to marinate for about 1-2 hours, but If you are short on time, you can reduce the marinating time to 1 hour or skip this step (skipping the marination step might speed up the process, but the meat will lose flavor and tenderness).
Is it better to bake at 180ºC (350ºF) or 150ºC (300ºF)?
We usually bake the pork ribs at 180ºC (350ºF), we think this is the limit temperature for the meat, potatoes and the sauce not to dry out. What we usually do is open the oven from time to time and baste the meat and the potatoes with the sauce that is full of seasonings. In addition to preventing from drying out, we are adding more flavor to the recipe.
If we lower the temperature to 150ºC (300ºF), it will take longer to bake but it has the advantage of enhancing much more the flavors and making the meat more tender and flavorful. Typically the recipe takes 30 to 45 minutes longer in the oven if baked at a temperature of 150ºC (300ºF).
Note: If you have time, marinate the pork ribs for 4 to 6 hours. The pork will absorb more the marinade seasonings, making it tastier.
