HOW TO MAKE EASY BAKED PORK TENDERLOIN
Step 1: Place the pork tenderloin and the peeled potatoes in a baking dish. Season with salt, chopped garlic, nutmeg, paprika, lemon juice and olive oil. Let marinate for about 1 hour.
Step 2: Preheat the oven to 180ºC (350ºF).
Step 3: Bake the tenderloin and potatoes until golden brown, about 1 hour. Occasionally, baste the loin and potatoes with the sauce to prevent the meat from drying out.
Step 4: Turn off the oven and serve.
TIPS FOR EASY BAKED PORK TENDERLOIN
1. If the tenderloin starts to brown too much cover with aluminum foil.
2. We usually bake the tenderloin at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to bake, it has the advantage of enhancing much more the flavors and the meat gets more tender.
3. If you have leftovers, store the meat in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out the meat, do not reheat the food in the oven, reheat it in the microwave.

How long should I marinate the tenderloin?
Our suggestion is to marinate for at least 2 hours. If you are short on time, you can skip this step, but if you have time, let the tenderloin marinate for about 4 to 6 hours, to bring out the flavors (if you are short on time, you can reduce the marinating time to 1 hour or skip this step. Skipping the marination step might speed up the process, but the tenderloin will lose flavor and tenderness.)
Remember that while marinating enhances flavor and tenderness, it's important not to over-marinate, especially with acidic marinades such as lemon or orange, as this can negatively affect the texture of the meat.
Can I store the tenderloin in the fridge?
Yes, you can store in the fridge! Allow the tenderloin and the potatoes to cool to room temperature and place them in an airtight container. Never store for more than 2 days. Beyond this time frame, it might start losing quality and develop microorganisms.
