HOW TO MAKE ROASTED PORK LOIN WITH ROSEMARY AND HONEY:
Wash the unpeeled potatoes and give a small cut across on each one of them. Place the pork loin and the potatoes on a baking dish and season with salt, pepper, peeled garlic, lemon juice, olive oil, honey and rosemary. Let marinate about 1 to 2 hours.

Ingredients
- 1.2 kg (2 2/3 pounds) pork loin
- Juice of one lemon
- 1 tablespoon honey
- 100 ml (1/2 cup) olive oil
- Pepper (to taste)
- 6 cloves of garlic
- Rosemary (to taste)
- 1 kg (2 1/4 pounds) small potatoes
- Salt (to taste)
Directions
- Wash the unpeeled potatoes and give a small cut across on each one of them.
- Place the pork loin and the potatoes on a baking dish and season with salt, pepper, peeled garlic, lemon juice, olive oil, honey and rosemary. Let marinate about 1 to 2 hours.
- Preheat the oven to 180ºC (350ºF).
- Place the pork loin in the oven and bake for about 1 hour and 30 minutes. Occasionally, drizzle the loin and the potatoes with the sauce.
- Turn off the oven and serve.
