Step 2: Place the pork loin and the potatoes on a baking dish and season with salt, pepper, peeled garlic, lemon juice, olive oil, honey and rosemary. Let marinate about 1 to 2 hours.

1. If the loin starts to brown too much cover with aluminum foil.
2. We usually roast the loin at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing much more the flavors and the meat gets more tender.
