HOW TO MAKE ROASTED PORK LOIN WITH CHESTNUTS
Step 1: Place the pork loin in a glass baking dish and season with white wine, a teaspoon of salt, pepper, unpeeled crushed garlic and thyme. Let marinate for about two hours.
Step 2: Preheat the oven to 180ºC (350ºF).
Step 3: Add the onions and potatoes cut into pieces to the baking dish, season with a teaspoon of salt and drizzle with olive oil.
Step 4: Roast for about one hour. Occasionally, drizzle the meat and the potatoes with the sauce.
Step 5: Pull the baking dish out of the oven and add the chestnuts.
Step 6: Place back the baking dish in the oven and continue to cook for more 25 to 30 minutes. Occasionally, drizzle everything with the sauce.
Step 7: Remove from oven and serve.

1. If the loin starts to brown too much cover with aluminum foil or reduce the oven temperature.
2. We usually roast the loin at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing the flavors much more and the meat gets more tender.
3. If you have leftovers, store the meat in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out the meat, do not reheat the food in the oven, reheat it in the microwave.
