HOW TO MAKE ROASTED PORK LOIN WITH LEMON AND ROSEMARY:

Place the pork loin on a baking dish and with a sharp knife give 3 to 4 cuts across the loin. Season with lemon juice, salt, nutmeg, unpeeled crushed garlic and rosemary. Marinate about 2 hours.

  • 1.2 kg (2 2/3 pounds) pork loin
  • Lemon juice (about 75 ml (1/3 cup))
  • Rosemary (to taste)
  • 50 ml (1/4 cup) olive oil
  • 2 tablespoons honey
  • 75 grams (1/3 cup) margarine
  • Nutmeg (to taste)
  • 6 cloves of garlic
  • Half a lemon
  • Salt (to taste)

Directions

  1. Place the pork loin on a baking dish and with a sharp knife give 3 to 4 cuts across the loin. Season with lemon juice, salt, nutmeg, unpeeled crushed garlic and rosemary. Marinate about 2 hours.
  2. Preheat the oven to 180ºC (350ºF).
  3. Add the margarine, olive oil, honey and the lemon cut into pieces to the baking dish and roast about 1 hour and 45 minutes. Occasionally, drizzle the pork loin with the sauce.
  4. Turn off the oven and serve with mushed potato.
