HOW TO MAKE BAKED PORK LOIN

Step 1: Wash and peel the potatoes.

Step 2: Place the pork loin on a baking dish and with a sharp knife give some cuts across the loin. Add the potatoes, the onion cut into pieces, the unpeeled crushed garlic, white wine, salt, pepper, paprika and olive oil. Marinate for about one hour. Step 3: Preheat the oven to 180ºC (350ºF).

Step 4: Bake until golden, about 1 hour and 30 minutes. Occasionally, drizzle the loin and the potatoes with the sauce.

TIPS FOR BAKED PORK LOIN

1. If the loin starts to golden brown too much cover with aluminum foil.

2. We usually bake the loin at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to bake, it has the advantage of enhancing the flavors much more and the meat gets more tender.

3. If you have leftovers, store the meat in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out the meat, do not reheat the food in the oven, reheat it in the microwave.

    • 1 medium onion
    • 6 cloves of garlic
    • 1/2 teaspoon pepper
    • 1/2 teaspoon paprika
    • 1.2 kg (2 2/3 pounds) small potatoes
    • Salt (to taste)
    • 150 ml (2/3 cup) olive oil
    • 100 ml (1/2 cup) white wine
