HOW TO MAKE PORTUGUESE STYLE BAKED FISH
Step 1: Preheat the oven to 180ºC (350ºF).
Step 2: Place the fish on a baking dish and use a sharp knife to make 3 to 4 cuts in the fish to absorb more the seasonings.
Step 3: Add the sliced onion, the peeled potatoes, the peeled tomato cut into pieces and the whole garlic. Season with white wine, salt, pepper, thyme and olive oil.
Step 4: Bake for about 1 hour and 20 minutes or until the fish and potatoes start to golden brown. Baste the fish and potatoes with the sauce from time to time.
Step 5: Turn off the oven and serve.
RECIPE TIPS
1. If the fish and potatoes start to brown too much, reduce the oven temperature or cover with aluminum foil.

- 100 ml (1/2 cup) olive oil
- 1 large onion

- 800 grams (1 3/4 pounds) small potatoes
- 1 large ripe tomato
- 150 ml (2/3 cup) white wine
