HOW TO MAKE INGREDIENTS FOR EASY CHICKEN AND RICE SOUP

Step 1: In a large pot, add the chicken and season with salt, coriander and onion cut into pieces. Pour the water and boil over high heat.

Step 2: When starts boiling, reduce to medium-high heat and simmer for about one hour.

Step 3: Add the rice and cook for more 13 to 15 minutes.

Step 4: Turn off the heat and serve (before serving, we often season this soup with a few drops of lemon juice).

TIPS FOR COOKING RICE

1. We usually use long-grain rice or medium-grain rice but you can use another type of rice. Long-grain rice is looser while medium-grain rice is creamier and absorbs all the flavors.
2. Rice cooking time: about 10 to 12 minutes for long-grain rice and 13 to 15 minutes for medium-grain rice.

3. If you prefer, you can add fresh parsley or fresh thyme instead of coriander.

4. For a tender chicken, cook this soup over medium-low heat.
