Homemade chicken soups have always been present in our lives. I remember when I was a child my grandmother or my mother making this chicken rice soup recipe. The smell of the soup flowing through the kitchen to the entire house was amazing, what good memories! I still make this soup like my grandmother used to, but you can add some extra ingredients like fresh herbs, carrot or even make this recipe with chicken breasts.
It's often said that the simplest recipes are often the tastiest and, in most cases, it's true. For this recipe, you don't need fancy ingredients to make a creamy Portuguese chicken soup, just 6 simple ingredients such as chicken pieces, water, onion, coriander, rice and salt are enought to make a healthy soup full of flavors.

- Water - For the soup broth.
- Coriander - Adds a nice fresh flavor.
- Long-grain rice or medium-grain rice - Long-grain rice is looser while medium-grain rice is creamier and absorbs all the flavors.
- Onion - Onion cut into pieces. Adds an extra flavor to the soup.
- Salt - For seasoning. Highlights all the other flavors.

HOW TO MAKE PORTUGUESE CHICKEN AND RICE SOUP
Step 1: In a large pot, add the chicken and season with salt, coriander and onion cut into pieces. Pour the water and boil over high heat.
Step 2: When it starts to boil, reduce to medium-high heat and simmer for about one hour.
Step 3: Add the rice and season with a little more salt. Stir and cook the rice for 10 to 12 minutes.
Step 4: Turn off the heat and serve (before serving, we often season this soup with a few drops of lemon juice).

1. We usually use long-grain rice or medium-grain rice but you can use another type of rice. Long-grain rice is looser while medium-grain rice is creamier and absorbs all the flavors.
2. Rice cooking time: about 10 to 12 minutes for long-grain rice and 13 to 15 minutes for medium-grain rice.
3. If you prefer, you can add fresh parsley or fresh thyme instead of coriander.
4. For a tender chicken, cook this soup over medium-low heat.

- 800 grams (1 3/4 pounds) chicken cut into pieces
- 2 liters (8 cups) water
- Coriander (to taste)
- 200 grams (1 cup) Long-grain rice or medium-grain rice
- 1 medium onion
- Salt (to taste)
- In a large soup pot, add the chicken and season with salt, coriander and onion cut into pieces. Pour the water and boil over medium-high heat.
