HOW TO MAKE HOMEMADE ROASTED PORK LOIN
Step 1: In a bowl, combine the olive oil, mustard, grated garlic, salt, pepper, nutmeg, paprika and Worcestershire sauce.
Step 2: Place the loin on a baking dish and with a sharp knife give 3 to 4 cuts across the loin. Drizzle with the previous mixture and marinate for 2 hours.
Step 3: Preheat the oven to 180ºC (350ºF).
Step 4: Roast the loin for 1 hour. Occasionally, drizzle the loin with the sauce.
Step 5: Turn off the oven and serve with fries or white rice.
TIPS FOR HOMEMADE ROASTED PORK LOIN
1. If the loin starts to golden brown too much, reduce the oven temperature or cover with aluminum foil.
2. We usually roast the loin at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing much more the flavors and the meat gets more tender.
3. If you have leftovers or want to save the loin for another occasion, let it cool completely and store it in the refrigerator in an airtight container (to prevent the growth of microorganisms). To avoid drying out the meat, do not reheat the food in the oven, reheat it in the microwave.
