Recipes from the Alentejo region are some of my favorites to make and especially to eat. They're simple, often quite economical, and prepared with ingredients that are widely used in Portuguese cuisine.
These tasty Portuguese migas with diced pork are made with traditional Portuguese ingredients, such as olive oil, coriander, sweet red pepper paste, bay leaf, white wine and stale bread to make the Portuguese migas!

INGREDIENTS FOR PORTUGUESE MIGAS WITH PORK

- Diced pork - Tender and flavorful pork, full of traditional Portuguese seasonings.
- Olive oil, sliced onion and peeled garlic - To sauté and flavor.
- Pepper, bay leaf, sweet red pepper paste, white wine, salt and unpeeled crushed garlic - To season the pork.
- Coriander - Chopped coriander. Adds a very traditional and pleasant flavor to the recipe.
- Bread - Stale bread cut into pieces.
- Water - Boiling water. To make the Portuguese migas.

HOW TO MAKE PORTUGUESE MIGAS WITH PORK
Step 1:
For the meat: Season the pork with salt, pepper, unpeeled crushed garlic, sweet red pepper paste, bay leaf and white wine. Let marinate about 1 to 2 hours.
Step 2: In a large saucepan, add the olive oil and the sliced onion. Sauté over low heat until the onion start to turn slightly golden, stirring occasionally.
Step 3: Add the pork and the marinade and stir with a spoon. Cover the pan with a lid and cook over medium-low heat about 35 to 40 minutes, stirring occasionally. Turn off the heat, sprinkle with chopped coriander and set aside.
Step 4:
For the Portuguese migas: Boil the water in a saucepan.
Step 5: In a large saucepan, add the olive oil and the peeled garlic. Sauté over low heat about 3 to 4 minutes, stirring occasionally.
Step 6: Add the bread cut into pieces, season with salt and pepper and mix in the sauté. Gradually pour the boiling water and stir with a wooden spoon until the bread begins to fall apart.
Step 7: Sprinkle with chopped coriander, mix well and serve the migas with the pork.

- 600 grams (1 1/3 pounds) diced pork
- 50 ml (1/4 cup) olive oil
- 1 medium onion
- 1/2 teaspoon pepper
- 5 cloves of garlic
- 2 bay leaves
- 1 tablespoon sweet red pepper paste
- 100 ml (1/2 cup) white wine
- 1 teaspoon salt
- Coriander (to taste)

- 100 ml (1/2 cup) olive oil

- 1.2 liters (5 cups) water
