  • 1.5 kg (3 1/3 pounds) chicken cut into pieces
  • 100 ml (1/2 cup) lemon juice
  • 100 ml (1/2 cup) olive oil
  • 1 teaspoon pepper
  • 1 teaspoon nutmeg
  • 1/2 teaspoon paprika
  • 8 cloves of garlic
  • Rosemary branch cut in 4
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt

Directions

  1. Place the chicken pieces on a baking dish.
  2. Add the lemon juice, olive oil, salt, pepper, nutmeg, paprika, peeled garlic, rosemary and Dijon mustard in a food processor and pulse for 20 seconds.
  3. Drizzle the chicken with the previous mixture and marinate for about 1 hour.
  4. Preheat the oven to 180ºC (350ºF).
  5. Bake the chicken until golden, about 1 hour. Occasionally, drizzle the chicken with the sauce.
  6. Turn off the oven and serve.
