HOW TO MAKE BAKED CHICKEN WITH LEMON AND GARLIC SAUCE
Step 1: Place the chicken pieces on a baking dish.
Step 2: Add the lemon juice, olive oil, salt, pepper, nutmeg, paprika, peeled garlic, rosemary and Dijon mustard in a food processor and pulse for 20 seconds.
Step 3: Drizzle the chicken with the previous mixture and marinate for about 1 hour.
Step 4: Preheat the oven to 180ºC (350ºF).
Step 5: Bake the chicken until golden, about 1 hour. Occasionally, drizzle the chicken with the sauce.
Step 6: Turn off the oven and serve the chicken with fries or mashed potato.
TIPS FOR BAKED CHICKEN WITH LEMON AND GARLIC SAUCE
1. If the chicken starts to brown too much cover with aluminum foil.
2. We usually bake the chicken at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to bake, it has the advantage of enhancing much more the flavors and the chicken gets more tender.
3. If you have leftovers, store the chicken in the fridge in a properly covered container (to prevent the growth of microorganisms). To avoid drying out the chicken, do not reheat the food in the oven, reheat it in the microwave.

- 100 ml (1/2 cup) lemon juice
- 100 ml (1/2 cup) olive oil
- 1 teaspoon pepper
- 1 teaspoon nutmeg

- 8 cloves of garlic
- Rosemary branch cut in 4
- 1 tablespoon Dijon mustard
