HOW TO MAKE TENDER AND JUICY BAKED CHICKEN LEG QUARTERS
Step 1: In a small bowl, combine the yellow mustard, grated garlic, salt, nutmeg, oregano, lemon juice and the olive oil.
Step 2: Place the chicken leg quarters in a baking dish and drizzle with the previous mixture. Let marinate about one hour.
Step 3: Preheat the oven to 180ºC (350ºF).
Step 4: Bake for about 1 hour or until golden brown. Baste the chicken with the sauce from time to time.
Step 5: Turn off the oven and serve with green peas rice, french fries, mashed potatoes or with spaghetti.
TIPS FOR TENDER AND JUICY BAKED CHICKEN LEG QUARTERS
1. If the chicken legs starts to brown too much, reduce the oven temperature or cover with aluminum foil.
2. We usually roast the chicken legs at 180ºC (350ºF) but, if you lower the temperature to 150ºC (300ºF), despite taking longer to roast, it has the advantage of enhancing much more the flavors and the chicken gets more tender.
3. If you have leftovers or want to save the chicken for another time, let the chicken leg quarters cool and store in the refrigerator in an airtight container (to prevent the growth of microorganisms). You can store for up to 2 to 3 days.

- Juice of one lemon
- 1 tablespoon oregano
- 3 cloves of garlic
- 4 tablespoons yellow mustard
- 100 ml (1/2 cup) olive oil
- 1 teaspoon salt
