You only need two main ingredients, walnuts, strong coffee and a few more basic ingredients to make a creamy and delicious cake batter. Besides being super tasty, it only takes 30 minutes to bake!

HOW TO MAKE EASY WALNUT COFFEE CAKE
Step 1: Preheat the oven to 180ºC (350ºF). Grease a bundt cake pan with butter and dust the inside of the pan with some flour (hold and rotate the pan so that the flour coats all surfaces).
Step 2: Using a hand mixer or stand mixer fitted with whisk attachment, beat the sugar, butter and the eggs until obtain a homogeneous and creamy mixture.
Pour the coffee and beat until it's nicely incorporated, about 1 to 2 minutes. Add the flour and the baking powder and beat until obtain a quite creamy mixture.
Add the chopped walnuts (125 grams (4 1/2 ounces)) and fold with a spatula.
Step 3: Pour the cake batter into the prepared pan and garnish with about 25 grams (1 ounce) of chopped walnuts.
Bake about 30 to 35 minutes.
Step 4: Remove the cake from the oven and allow to cool for 25-30 minutes inside the pan.
Step 5: Remove from the pan and place the cake onto a wire rack or plate.
Step 6: Allow to cool completely and serve.
RECIPE TIPS
1. Do not open the oven door all the way, leave the door slightly open and wait 5 to 10 minutes so that the heat enters the kitchen and there is no temperature shock that causes the cake to collapse (the time depends on the season of the year, if it is summer leave it for about 5 minutes, if it is winter 10 minutes).
2. Place the oven rack in the middle. This allows the hot air to circulate evenly around the batter, resulting in even cooking.
3. When placing the cake in the oven, make sure the oven is not too hot, if it is, the cake will rise too quickly and there will be no time for the inside of the cake to cook at the same rate (in this case, what often happens is that the cake sinks in the middle). If the oven is very hot, leave the oven door open until the temperature drops a little.

How to get cake out of pan?
Remove the cake from the oven and allow the cake to cool in the pan for about 25 to 30 minutes. Gently run a flexible knife around the edges of the cake. Ensure you reach all sides of the pan.
Place a wire rack or a serving dish on top of the cake pan. Hold the rack and the pan firmly together and carefully invert them. Gently tap the bottom of the pan or give it a few shakes to release the cake. Allow the cake to cool completely and serve.
How to keep a cake from sticking?

How do you store this cake?
Allow the cake to cool completely before storing. Wrap the cake tightly in plastic wrap or aluminum foil to prevent it from drying out. Place the wrapped cake in an airtight container or in a plastic bag (You can also cut the cake into slices and store individually).
Never store the cake at room temperature for more than 3 days. Beyond this time frame, it might start losing its taste and quality.

- 50 ml (1/4 cup) strong coffee
- 200 grams (1 1/2 cups) all-purpose flour
- 150 grams (2/3 cup) granulated sugar
- 4 medium eggs
- 125 grams (1/2 cup) softened butter
- 1 teaspoon baking powder
- Preheat the oven to 180ºC (350ºF). Grease a bundt cake pan (24 x 8 centimeters (9 1/2-inch diameter with 3 1/4-inch-high sides)) with butter and dust the inside of the pan with some flour (hold and rotate the pan so that the flour coats all surfaces).
- Using a hand mixer or stand mixer fitted with whisk attachment, beat on medium speed the sugar, butter and the eggs until obtain a homogeneous and creamy mixture. Pour the coffee and beat until it's nicely incorporated, about 1 to 2 minutes. Add the flour and the baking powder and beat until obtain a quite creamy mixture.
