  • Whole egg (or egg yolk) - To brush the puff pastry before baking.
  • Puff pastry - Square sheet.

HOW TO MAKE MEAT PUFFS

Step 1: Preheat the oven to 180ºC (350ºF). Line a large baking sheet with parchment paper.

Step 2: In a large bowl, mix the beef with the pork.

Step 3: Season with breadcrumbs, salt, nutmeg, pepper, fresh thyme and an egg yolk. Mix with your hands or with a spoon the seasonings in the meat.

Step 4: Roll out the puff pastry over the parchment paper. Place two meat rolls on each end of the pastry (leave a small border on the edges like is in the image below).

Step 5: Fold the left side of the pastry over the meat rolls in towards the middle, then fold the right side in so that they meet perfectly in the middle.

Step 6: Brush with a beaten egg (or an egg yolk) and cut in 10 slices (do not cut all the way through).

Step 7: Bake for 25 to 30 minutes or until golden.

RECIPE TIPS

1. You can store this puffs at room temperature for up two days. Wrap in aluminium foil and place them in an airtight container.

2. You can season the meat with many other ingredients, such as garlic powder, curry powder, chopped parsley, chili powder or other ingredients that you like best.
