HOW TO MAKE TRADITIONAL SALT COD

Step 1: Wash the peeled potatoes. Place the potatoes in a saucepan with water seasoned with salt. Boil over medium-high heat. When starts boiling, reduce to medium-low heat and cook the potatoes for about 20 minutes.

Step 2: Turn off the heat and drain the potatoes with a skimmer.

Step 3: With a knife, give a small cut on each potato and set aside. Cut the cod steaks into pieces.

Step 4: In a skillet, pour the olive oil, onion cut into round slices, red pepper cut into strips and the unpeeled crushed garlic. Sauté over low heat until the onion start to turn slightly golden, stirring occasionally.

Step 5: Add the cod, season with pepper and paprika and cook the cod on both sides for about 10 minutes. Add the potatoes, shake the skillet and cook for more 3 to 4 minutes.

Step 6: Turn off the heat and sprinkle with chopped coriander. Garnish with olives and serve.

TIPS FOR SOAK THE COD

1. Rinse the cod under cold water.

2. Place the cod with the skin facing up in a large bowl and cover it with cold water.

3. Allow the cod to soak for at least 24 hours, changing the water every 8 to 12 hours.

4. After 24 hours, taste a small piece of the cod to check for saltiness. If it is still too salty, continue soaking and changing the water until it reaches your desired level of saltiness.

5. The soaking time may vary depending on the thickness of the cod and the quantity of salt the cod have.
