HOW TO MAKE MINHO-STYLE COD
Step 1: Season the cod steaks with pepper and a little salt if necessary. Coat the cod steaks in beaten egg and then in breadcrumbs. Set aside.
Step 2: Wash, peel the potatoes and cut them into round slices. Fry them in hot oil. Place them on a platter over absorbent paper. Set aside.
Step 3: Meanwhile, in a frying pan, heat the vegetable oil. Add the cod steaks and fry them on both sides.
Step 4: In another skillet, add the olive oil, the onions cut into round slices and the unpeeled crushed garlic. Leave to sauté over low heat until the onion starts to turn golden.
Step 5: Place the cod and the potatoes on a plate, drizzle the cod with the olive oil and onion sauce and serve.
TIPS FOR SOAK THE COD
1. Rinse the cod under cold water.
2. Place the cod with the skin facing up in a large bowl and cover it with cold water.
3. Allow the cod to soak for at least 24 hours, changing the water every 8 to 12 hours.
4. After 24 hours, taste a small piece of the cod to check for saltiness. If it is still too salty, continue soaking and changing the water until it reaches your desired level of saltiness.
5. The soaking time may vary depending on the thickness of the cod and the quantity of salt the cod have.

- 1 kg (2 1/4 pounds) salt cod, soaked for 24 hours
- Pepper (to taste)
- 1.2 kg / (2 2/3 pounds) potatoes
- 2 medium onions
- 6 cloves of garlic
- 100 ml / (6 3/4 tablespoons) olive oil
- Breadcrumbs
- 1 egg
- Salt (to taste)
- Vegetable oil for frying
