HOW TO MAKE COD RICE
Step 1: Cook the cod in a saucepan with water. When the cod is cooked, drain it with a skimmer and let cool slightly. Remove the skin and bones and flake the cod with a fork; set aside. Reserve the cooking water.
Step 2: In a saucepan, add the chopped onion, the red pepper cut into strips, the peeled tomato cut into small chunks, the chopped garlic and the olive oil. Cook over low heat until the tomato start to break down.
Step 3: Add the flaked cod and the rice and season with a little salt and pepper. Stir, pour the cod cooking water (enough water to completely cover the mixture and boil over medium-high heat. When starts boiling, reduce to low heat and cook for 10 to 12 minutes.
Step 4: Turn off the heat, sprinkle with chopped coriander and serve immediately.

- 3 desalted cod steaks (about 800 grams (1 3/4 pounds))
- 50 ml (1/4 cup) olive oil
- 200 grams (1 cup) rice
- 1 medium onion
- 3 cloves of garlic
- Pepper (to taste)
- Coriander (to taste)
- 1/2 red pepper
- 3 medium ripe tomatoes
- 1.5 liters (6 cups) water
- Salt (to taste)
- Place the cod in a saucepan with water and boil over medium-high heat. When starts boiling, reduce to low heat and cook about 7 to 8 minutes.
