HOW TO MAKE RICE WITH COD AND PEAS:

Cook the cod in a saucepan with water about six to seven minutes. When the cod is cooked, remove it with a skimmer to a dish (reserve the cooking water). Remove the skin and bones to the cod, flake it with a fork and set aside.
Put the olive oil, chopped onion, chopped garlic, peas and the peeled chouriço cut into pieces in a saucepan and saute over low heat about 20 to 25 minutes. Add the flaked cod and the rice and season with a little salt and pepper. Stir and cook about 2 to 3 minutes. Pour the cod cooking water (twice the rice volume) and boil over medium-high heat. When starts boiling, reduce to low heat and simmer about 10 to 12 minutes.
Turn off the heat and serve.

  • 3 desalted cod steaks (about 800 grams (1 3/4 pounds))
  • 200 grams (1 1/3 cups) peas
  • 250 grams (1 1/4 cups) rice
  • 50 ml (1/4 cup) olive oil

  • 6 cloves of garlic
  • Pepper (to taste)
  • 1 medium onion
