HOW TO MAKE YOGURT, APPLE AND CINNAMON CAKE

Beat the eggs and the brown sugar until obtain a creamy and homogeneous mixture. Add the yogurt, cinnamon and mix for 1 to 2 minutes until it's nicely incorporated. Add the flour mixed with the baking powder and beat until obtain a very creamy mixture. Add the apple cut into pieces to the dough and fold with a spatula. Pour the dough into the prepared tin Yogurt, apple and cinnamon cake dough on a loaf tin and bake about 35 minutes.     Ingredients

    • 125 grams (4 1/2 ounces) natural yogurt
    • 3 eggs
    • 3 red apples
    • 200 grams (1 1/2 cups) all-purpose flour
    • 150 grams (about 1 cup) dark brown sugar
    • 1/2 tablespoon cinnamon powder
    • 2 teaspoons baking powder

    Directions

    1. Preheat the oven to 180ºC (350ºF). Grease a loaf tin (25 x 11 centimeters with 7 centimeters high (9 3/4 x 4 1/3-inch with 2 3/4-inch-high)) with margarine and dust with flour.
    2. In an electric mixer, beat on medium speed the eggs and the brown sugar until obtain a creamy and homogeneous mixture. Add the yogurt, cinnamon and mix for 1 to 2 minutes until it's nicely incorporated. Reduce the mixer speed to low, add the flour mixed with the baking powder and beat until obtain a very creamy mixture. Meanwhile, wash, peel the apples and cut them into small pieces. Add the apple to the dough and fold with a spatula.
    3. Pour the dough into the prepared tin and bake until a toothpick inserted in the center comes out clean, about 35 minutes (the time depends on the oven).
    4. When the cake is cooked, remove from oven and unmold onto a plate. Let cool completely and serve.
