HOW TO MAKE APPLE, PINEAPPLE AND CINNAMON CAKE

Beat the eggs and the brown sugar until obtain a homogeneous mixture. Add the cinnamon, the vanilla extract and mix for 3 to 4 minutes until it's nicely incorporated. Add the flour mixed with the baking powder and beat until a creamy and homogeneous mixture. Finally, fold with a spatula the peeled pineapple cut into pieces and the peeled apples cut into pieces.

    Ingredients

    • 4 eggs
    • 1 tablespoon cinnamon powder
    • 150 grams (about 1 cup) light brown sugar
    • 2 red apples
    • 1 tablespoon vanilla extract
    • 200 grams (1 1/2 cups) all-purpose flour
    • 250 grams (8 3/4 ounces) pineapple
    • 2 tablespoons light brown sugar
    • 1 teaspoon baking powder

    Directions

    1. Preheat the oven to 180ºC (350ºF). Grease a round cake pan (20 x 7 centimeters (8 x 2 3/4 inches)) with margarine and dust with some flour.
    2. In an electric mixer, beat on medium speed the eggs and the brown sugar until obtain a homogeneous mixture. Add the cinnamon, the vanilla extract and mix for 3 to 4 minutes until it's nicely incorporated. Reduce the mixer speed to low, add the flour mixed with the baking powder and beat until a creamy and homogeneous mixture. Finally, fold with a spatula the peeled pineapple cut into pieces and the peeled apples cut into pieces.
    3. Pour the dough into the prepared pan and sprinkle with two tablespoons light brown sugar. Bake until a toothpick inserted in the center comes out clean, about 40 minutes (the time depends on the oven).
    4. Remove the cake from the oven and unmold onto a plate. Let cool completely and serve.
