HOW TO MAKE CHICKEN IN THE OVEN WITH RICE
Rub the chicken pieces with margarine and place on a baking pan. Season with a little salt, lemon juice, pepper, nutmeg, chopped garlic, paprika and thyme. Drizzle with olive oil and white wine and marinate for 1 hour. Bake the chicken until start to turn golden, about 45 to 50 minutes. Occasionally, drizzle the chicken with the sauce.
For the rice: Meanwhile, place the olive oil, chopped onion, the peppers cut into strips and the bay leaf in a saucepan and saute over low heat until the onion start to turn slightly golden. Add the rice and season with some salt. Stir and fry the rice for 1 minute. Pour the water (twice the rice volume), stir and boil over medium-high heat. When starts boiling, reduce to low heat and cook for about 10 minutes. Turn off the oven and serve the chicken with the rice. Bon appetit!!!

- 1.5 kg / (3 1/3 pounds) chicken cut into pieces
- 2 tablespoons margarine
- Thyme (to taste)
- Pepper (to taste)
- Juice of one lemon
- Nutmeg (to taste)
- 4 cloves of garlic
- 1/2 teaspoon paprika
- 100 ml / (6 3/4 tablespoons) olive oil
- 100 ml / (6 3/4 tablespoons) white wine
- Salt (to taste)
- 250 grams / (8 3/4 ounces) rice
- 50 ml / (3 1/3 tablespoons) olive oil
- 1 bay leaf
- 1 medium onion
- 1/2 green pepper
- 1/2 red pepper
