HOW TO MAKE CONGER WITH PEPPERS

Step 1: In a skillet, pour the olive oil, the onion in half moon slices, the peeled garlic and the peppers cut into strips. Sauté over medium-low heat about 5 minutes, stirring occasionally.

Step 2: Add the conger and season with a little salt, saffron, lemon juice, oregano, pepper and paprika. Drizzle with white wine, cover the skillet and cook over low heat about 20 minutes.

Step 3: Turn off the heat and serve the conger with rice or fries.

    • 50 ml (1/4 cup) olive oil
    • 1/2 green pepper
    • 1/2 red pepper
    • 1/2 orange pepper
    • Juice of one lemon
    • 50 ml (1/4 cup) white wine
    • Pepper (to taste)
    • Saffron (to taste)
    • 1/2 teaspoon paprika
    • Oregano (to taste)
    • 2 cloves of garlic
    • 1 medium onion
    • Salt (to taste)
