HOW TO MAKE FARÓFIAS WITH APPLE PUREE
For the farófias: Pour the milk, lemon peel and the cinnamon stick in a saucepan and bring to a boil over medium-high heat.
Meanwhile, separate the yolks from the whites. Beat the egg whites until stiff peaks form. When the milk starts boiling, reduce over low heat and add portions of the whipped egg whites with the help of a spoon. Go turning the egg whites with the spoon until they are cooked. When they are cooked, turn off the heat, drain with a skimmer and set aside on a plate.
For the apple puree: Wash, peel the apples and cut them into pieces. Place the apple pieces and the cinnamon stick in a saucepan with water and bring to a boil over high heat. When starts boiling, reduce to medium heat and cook about 3 to 4 minutes. Turn off the heat, remove the cinnamon stick and drain the apples. Place the apples in a blender together with the sugar and blend until pureed. Place in the bottom of individual bowls the apple puree and, on top the farófias. Sprinkle with cinnamon powder, garnish with a cinnamon stick and serve. Reserve in the fridge.
