HOW TO MAKE SOAKED PINEAPPLE CAKE:
Beat the sugar, eggs and the lemon zest until obtain a homogeneous mixture. Add the flour and the baking powder and beat until a creamy and homogeneous mixture. Pour the mixture into the prepared pan
and bake for about 20 minutes. When the cake is cooked, remove from the oven and unmold onto a plate.
Prick the cake a few times with a toothpick, pour the syrup over the cake and garnish with pineapple slices. Let cool completely and serve.

- 4 medium eggs
- 4 pineapple slices (about 200 grams (7 ounces))
- 175 grams (1 1/4 cups) all-purpose flour
- 125 grams (1/2 cup) granulated sugar
- 1 teaspoon baking powder
- Zest of one lemon
- 200 ml (about 1 cup) pineapple syrup
Directions
- Preheat the oven to 180ºC (350ºF). Grease a round cake pan (20 x 7 centimeters (8 x 2 3/4 inches)) with butter and dust with some flour.
- In an electric mixer, beat on medium speed the sugar, eggs and the lemon zest until obtain a homogeneous mixture. Reduce the mixer speed to low, add the flour and the baking powder and beat until a creamy and homogeneous mixture.
- Pour the mixture into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 20 minutes (the time depends on the oven).
- When the cake is cooked, remove from the oven and unmold onto a plate. Prick the cake a few times with a toothpick, pour the syrup over the cake and garnish with pineapple slices. Let cool completely and serve.
