Peel and mash the bananas with a fork; set aside.
Beat the mashed bananas, sugar and the softened butter until obtain a creamy mixture. Add the eggs and the vanilla extract and beat until a homogeneous mixture. Ingredients

  • 2 medium bananas
  • 1 tablespoon cocoa powder
  • 3 medium eggs
  • 200 grams (1 1/2 cups) all-purpose flour
  • 175 grams (3/4 cup) granulated sugar
  • 125 grams (1/4 cup) softened unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Directions

  1. Preheat the oven to 180ºC (350ºF). Grease a loaf tin (25 x 11 centimeters with 7 centimeters high (9 3/4 x 4 1/3-inch with 2 3/4-inch-high)) with margarine and dust with flour.
  2. Peel and mash the bananas with a fork; set aside.
  3. In an electric mixer, beat on medium speed the mashed bananas, sugar and the softened butter until obtain a creamy mixture. Add the eggs and the vanilla extract and beat until a homogeneous mixture. Add the flour, cocoa powder, baking powder and beat until obtain a homogeneous and creamy dough.
  4. Pour the mixture into the prepared tin and bake until a toothpick inserted in the center comes out clean, about 40 to 45 minutes (the time depends on the oven).
  5. Turn off the oven and unmold the cake onto a rectangular platter. Let cool to room temperature and serve.
