HOW TO MAKE BANANA ORANGE CAKE:

Smash the bananas with a fork.
Beat the sugar, eggs and the orange zest until obtain a homogeneous mixture. Add the orange juice, smashed banana, cinnamon powder and mix for 2 to 3 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour and the baking powder and beat until obtain a creamy and homogeneous mixture.   • 2 medium bananas
  • 100 ml (1/2 cup) orange juice
  • Zest of one orange
  • 200 grams (1 1/2 cups) all-purpose flour
  • 150 grams (2/3 cup) granulated sugar
  • 1/2 teaspoon cinnamon powder
  • 1 teaspoon baking powder

Directions

  1. Preheat the oven to 180ºC (350ºF). Grease a loaf tin (25 x 11 centimeters with 7 centimeters high (9 3/4 x 4 1/3-inch with 2 3/4-inch-high)) with margarine and sprinkle with flour.
  2. Smash the bananas with a fork.
  3. In an electric mixer, beat on medium speed the sugar, eggs and the orange zest until obtain a homogeneous mixture. Add the orange juice, smashed banana, cinnamon powder and mix for 2 to 3 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour and the baking powder and beat until obtain a creamy and homogeneous mixture.
  4. Pour the mixture into the prepared tin and bake until a toothpick inserted in the center comes out clean, about 40 minutes (the time depends on the oven).
  5. Turn off the oven and unmold the cake. Let cool to room temperature and serve.
