HOW TO MAKE BANANA CAKE:

Smash the bananas with a fork.
Beat the sugar, butter and the eggs until obtain a homogeneous mixture. Add the smashed banana, honey, vanilla extract and mix for 3 to 4 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour and the baking powder and beat until obtain a creamy and homogeneous mixture. Pour the mixture into the prepared tinBanana cake dough on a loaf tin and bake about 40 minutes. Turn off the oven and unmold the cake. Let cool completely and serve with a hot cup of coffee.

Ingredients

  • 2 medium bananas
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 100 grams (1/2 cup) butter to room temperature
  • 125 grams (1/2 cup) granulated sugar
  • 175 grams (1 1/4 cups) all-purpose flour
  • 1 tablespoon honey
  • 1 teaspoon baking powder

Directions

  1. Preheat the oven to 180ºC (350ºF). Grease a loaf tin (24 x 10 centimeters with 7 centimeters high (9 1/2 x 4-inch with 2 3/4-inch-high)) with margarine and line with parchment paper.
  2. Smash the bananas with a fork.
  3. In an electric mixer, beat on medium speed the sugar, butter and the eggs until obtain a homogeneous mixture. Add the smashed banana, honey, vanilla extract and mix for 3 to 4 minutes until it’s nicely incorporated. Reduce the mixer speed to low, add the flour and the baking powder and beat until obtain a creamy and homogeneous mixture.
  4. Pour the mixture into the prepared tin and bake until a toothpick inserted in the center comes out clean, about 40 minutes (the time depends on the oven).
  5. Turn off the oven and unmold the cake. Let cool completely and serve with a hot cup of coffee.
